[summer salad] ideas


Ingredients:
250g new potatoes, washed
Small bunch of chives
1 smoked mackerel fillet, skin and bones removed
Small handful each of rocket and watercress
1 plain, cooked beetroot (not in vinegar), chopped
1 tbsp crème fraiche mixed with 1 tsp horseradish sauce

Method:
1. Cook the potatoes until tender. Drain well, toss with the crème fraîche and horseradish mixture and snip in the chives.

2. Tip the potatoes into a serving bowl, toss with the rocket and watercress leaves and flake in the mackerel. Finally, top with the beetroot pieces.

Ingredients:
2 handfuls rocket leaves, washed
2 cooked chicken breasts, diced
1 large avocado, stoned and diced
3 rashers smoked streaky bacon, grilled until crisp
2 heaped tbsp plain natural yoghurt
2 tbsp Gorgonzola
1 tsp lemon juice
Salt and black pepper

Method:
1. In a small bowl, combine the yoghurt, blue cheese and lemon juice. Season with a pinch of salt and a generous grinding of black pepper. Set to one side.

2. In a serving bowl, toss together the rocket leaves, chicken, avocado and bacon and pour over the dressing. Season with more pepper if needed, before serving.
